Brick can and often are used for bearing walls as far as what is the best way or detail for this is a job by job decision. For more information on brick bearing wall check out The Brick Industry's site or the Northwest Masonry Guide. At BIA it is in the tech tip section number 24 but in the Guide I don't remember the section but you should be able to find it the site is easy to navigate.
